Pan Roasted Brussel Sprouts with Shrimp

We visited my brother Dwayne’s house for Christmas. While there, my lovely niece, Rebecca, and her good friend, Shelby, whipped up a Brussel sprouts side dish that hit the spot.  I didn’t get Becky’s recipe, but I did copy and steal where I could on the internet, and came up with this. And it turned out to be VERY VERY good!

Ingredients

1 pound medium shrimp, peeled and deveined
1 pound Brussel sprouts — trimmed and cut in half lengthwise

3 Tablespoons butter
1 teaspoon olive oil
onion powder
garlic powder
black pepper
salt
Old Bay Seasoning
Parmesan or Cotija cheese, grated
Bacon bits (I used packaged bacon bits — you may prefer to fry up a few slices of bacon.)
Sriracha sauce

Directions

Season shrimp with Old Bay and set aside.

Place butter and oil in a large skillet over medium heat. Add Brussel sprouts and stir to coat.  Add salt, pepper, garlic and onion powders. Stir well.

Adjust heat to a medium low setting and allow sprouts to  cook. Stir now and then. When they begin to brown after about  7-10 minutes, add the shrimp to the pan. Add an additional pat of butter and toss well.

Continue to stir and cook until shrimp are done  (3-7 minutes depending on the size of the shrimp and the heat of the pan).

Add the bacon and toss well.

Serve up with a sprinkling of Cotija or Parmesan and a good dose of Sriracha sauce.
